Summertime Strawberry Snacks
Strawberry season marks the true beginning of summer in our neck of the woods. Coming yearly just as school is letting out and the summer is languishing before us, stretching out as if it will never end and pregnant with possibility, I love the sight of berries at the market.
While my kids could eat bowls of strawberries by their lonesome, and often do, here are a few of our favorite alternative methods to just popping them in our mouths. Perfect for parties, picnics, or just a summer evening dinner with your family, eaten as the sun is setting.
“Cheesecake”-Stuffed Strawberries:
¼ cup cream cheese, softened
1 tablespoon raw honey
½ teaspoon vanilla extract
1 cup fresh strawberries, cleaned and hulled
Mix together the cream cheese, honey, and vanilla in a small bowl until creamy. Spoon the cream cheese into a pastry bag or a zip-top bag. Cut the tip and squeeze the cream cheese into the well in the strawberries. Once all the strawberries are filled, they can be sprinkled with decorations or eaten as is.
Strawberries and Angel Food Cake
1 pound strawberries
3 tablespoons granulated sugar
1 cup heavy cream
2-3 tablespoons confectioners’ sugar
1 loaf angel food cake (purchased or made)
Slice strawberries and sprinkle with granulated sugar. Set aside in the refrigerator and allow the sugar to draw the juice out of the strawberries. Before ready to eat, whip the cream and confectioners’ sugar until stiff peaks form. Serve sliced cake with strawberries and sauce, topped with whipped cream.

Mmmmm… That first one sounds tasty!
We do a variation on that second one, but we usually get this “puff” pastry shell. Not sure what kind of cake it is, though. But it’s good with the strawberries.
Another treat we like is to mix some strawberries with either bananas or other berries like raspberries and blueberries with a little sugar sprinkled on top. Easy to make and the whole family loves it!
